½ cup cubed Canadian-style bacon or ham
2 cups fat-skimmed chicken both
2 cups instant rice
1 cup chopped sweet onion
1 cup fresh (or canned, drained) bean sprouts
½ cup diced fresh zucchini
½ cup diced bell pepper
5 tbsp. light (salt-reduced) soy sauce

Directions:

Spray a non-stick baking pan liberally with cooking spray. Arrange the Canadian-style bacon cubes in a single layer. Place pan in oven and set heat at 350º degrees. When the meat cubes are slightly brown, remove the pan from oven and add remaining ingredients. Stir to mix well. Cover with a lid or sheet of aluminum foil. Bake 20 minutes. Fluff with a fork before serving.
