⅔ c warm water (105ºF - 115ºF)
1 pk quick rise yeast
1 Tbsp olive oil
1 tsp erythritol
1 tsp cane sugar
1 c (120g) whole wheat flour
¼ c (30g) unbleached all purpose flour
½ c (40g) old fashioned oats
¼ c (20g) quick oats

Preheat oven to 450ºF
Line pizza pan with nonstick foil

In a small bowl combine water, yeast, oil, erythritol and sugar. Let stand 10 minutes or until foamy

In a medium bowl combine both flours and both oats

Using a hand mixture on low, combine wet ingredients into dry ingredients
Once ingredients are wet, increase speed and continue beating for 2vminutes

On a lightly floured surface, knead dough by hand 1 - 2 minutes

Form dough ball and place in an oiled bowl, turning once to oil entire dough ball
Cover bowl with tea towel and place in a warm place for 30 minutes or until the dough has doubled in size
Punch down the dough, transfer to prepared pan and form pizza shape by stretching dough to fill the pan

Top with sauce, cheese and favorite toppings

Bake 20 minutes or until golden brown
