1 box yellow cake mix
1 cup all-purpose flour
1 cup granulated sugar
½ tsp. salt
3 large eggs, room temperature
1 ⅓ cup milk, room temperature
2 T. vegetable oil
1 cup sour cream, room temperature
2 tsp. vanilla

Directions:

1. Preheat oven to 325º
2. Grease and flour two 8” cake rounds
3. Combine all dry ingredients and whisk together
4. Add wet ingredients and mix until combined. Mix on low for 2 minutes
5. Divide the batter between the pans and bake for approximately 50 minutes.
6. Cool the pans on wire racks for 10 minutes, then turn cakes onto wire racks to cool completely.

Personal Notes:
- For chocolate cake mixes, instead of adding 1 cup of flour, add ¾ cup flour and ¼ cup cocoa powder.
- For a pure white cake, use 5 egg whites in place of the 3 whole eggs
- Be sure to use room temperature ingredients as this will yield best results
- Use full-fat sour cream
- Use simple syrup to keep a cake moist. As much as we try, sometimes cakes come out drier than we want. Just trim the crust from the top of the cake, or poke some holes into it, and drizzle simple syrup onto the cooled layers.
