2 eggs, separated
Juice and grated rind of 1 lemon
1 c. sugar
1/8 tsp. salt
4 tsp. flour
1 tsp. melted butter
1 c. milk

Directions:
Directions:
Beat egg yolks until thick and lemon-colored. Add the lemon juice and rind, sugar, salt, flour and milk. Last, fold in the egg whites, beaten stiff.

Pour into an unbaked pastry shell (with the edges fluted) and bake in a hot oven 450º for 10 minutes; reduce heat to moderate 350º and bake 20 minutes longer.
