1 # sirloin steak
1 T. flour + 3 T. for roux
1/2 tsp salt
2 T. melted shortening or butter + 2 T. for roux
1/2 cup onion, chopped fine
8 oz. sliced fresh mushrooms or 3 oz. can drained sliced mushrooms
1 clove garlic minced
1&1/2 cups beef broth or more
1 T. tomato paste
1 cup sour crème
1-2 T. white wine
S&P to taste

Directions:
Slice sirloin steak into 1/4 inch strips. Toss the sliced steak with 1 T flour and 1/2 tsp. salt. Heat 2 T. shortening or butter in skillet. Brown meat. Add mushrooms, onion and garlic and saute 3-4 minutes. Remove meat and veggies from pan. Add 2 T. butter to skillet and heat to bubbling. Whisk in 3 T. flour until flour is cooked and thickened.
Add in tomato paste and whisk in 1&1/2 cups beef broth. Cook and stir until to thick and bubbly. Add more broth if desired. Add S&P to taste.
Return meat to skillet and stir in sour cream and wine. Heat through but DO NOT BOIL..
Serve immediately with cooked noodles or rice. If not serving immediately- keep warm with double boiler.
