2 pounds pork, cut in small pieces
2 cups water
¼ cup soy bean sauce
2 tbsp. sugar
2 medium tomatoes
1 large green pepper
½ cup chopped green onions
⅔ cup canned pineapple chunks
your favorite batter to fry pork (see miscellaneous recipes for one)

Simmer pork in water, soybean sauce and sugar for 45 minutes. Drain. While pork is cooking prepare Sweet and Sour Sauce and the batter. Cut tomatoes in wedges and remove juice and seeds. Cut green pepper in large pieces. Dip cooked pork in batter and cook in hot fat about an inch deep in frying pan, until golden brown. Place on warm platter. Lightly sauté tomatoes, green pepper, green onions, and pineapple a few minutes, keeping vegetables crisp. Scatter these over fried pork; pour hot Sweet and Sour Sauce over this colorful dish.

Sweet and Sour Sauce: ½ cup vinegar, 1½ cups water, 1 cup sugar, ⅓ cup cornstarch
½ cup pineapple juice, and ¾ cup drained sweet bread and butter pickles juice. Bring vinegar, water and sugar to a boil. Combine cornstarch, pineapple juice and pickle juice. Add to hot vinegar mixture and stir until thickened.
