1 onion
1 egg

Directions:
Coarsely grate the potatoes and onion into a clean tea towel and then squeeze out the excess liquid by twisting the towel. Place the mix in a large bowl.

Add the egg, a good couple of pinches of salt and freshly ground black pepper

Heat a good glug of oil in a pan on medium-high

For each hash brown, add 2 spoonful's of the mix into the pan and flatten into 1cm thick disks.

Cook for 2-3 mins each side or until crispy

I had to explain to my co-worker worker what a "glug" of oil is

In case you don't know, it's a large measure of oil and poured fast enough so that the oil makes a glug sound coming out the neck of the bottle
