2 chicken breasts
3 large potatoes
2 ciabatta rolls
2 slices of lettus
squeeze of lime

Peri peri seasoning

Wrap the potatoes in tinfoil and cook them in the over at 200C for 30min, then let them cool before cutting them in wedges, drizzling in oil, sprinkling with salt and pepper and cooked in the oven at for an additional 10 min

Alternatively just jump to the oil drizzle after cutting into wedges and cook for 35 mins,

To butterfly the chicken breast, put it chopping board, with your hand flat on top of it. use a sharp knife to slice into one side of the breast, starting at the thicker end and ending at the thin point. Be careful not to cut all the way through to the other side.

Open out the breast so that it resembles a butterfly, then cover with cling film and flatten with a rolling pin to create an even thickness.

Drizzle with peri peri seasoning on both sides and marinate for 10 mins.

In the mean time, slice and toast you ciabatta bun

Pan fry the chicken breasts for 3 mins on each side in a medium-high pan and finish them with a squeeze of lime juice

Place the chicken breast on the bun, top with the lettus and serve with your wedges
