1¼ c cake flour
¾ c sugar
1 tsp cornstarch
½ tsp baking soda
½ tsp baking powder
½ salt
½ c cold unsalted butter, cubed
½ c light brown sugar packed
¼ c white granulated sugar
1 large egg
1 egg yolk
3 c milk chocolate chips

Whisk all-purpose flour, cake flour, cornstarch, baking soda, baking powder & salt together in a large bowl. Set aside.

Place the cubed butter into the bowl of a stand mixer. Turn the mixer on the lowest setting. Let the mixer cream the butter for 30 seconds and then add in the brown sugar followed by the white for 30 seconds.

Add in the egg and egg yolk and mix until blended well.

Keep the mixer on low and gradually add in the flour mixture. Slowly and carefully add it in a little at a time until ingredients are incorporated. Then add in the chocolate chips and mix just until the chips are incorporated.

Measure out 6 (6 oz.) cookies. You can use a food scale for this but if you don't have one, simply eyeball it. Keep the cookies nice and tall and don't flatten them.

Bake 10-12 minutes. The tops will be golden brown and the secret is to pull them out before you think they are done. Let them rest on the cookie sheet for 15-30 minutes.

Place cookies on wire rack to finish cooling completely. Enjoy with a big tall glass of milk.
