1 lb. ground beef
1 egg
1 tbsp. cornstarch
1 tsp. salt
1 ½ tbsp. chopped onion
1 tbsp. butter
1 sliced green pepper
1 can chunk pineapple
⅓ cup vinegar (mild)
⅓ cup pineapple juice
2 ½ tbsp. sugar or more if needed
⅔ cup chicken stock
2 ½ tbsp. cornstarch
1 tbsp. soy sauce

Directions:

Mix hamburger, egg, 1 tbsp. cornstarch, salt, and onion together. Form into balls and brown. Sauté in 1 tbsp. butter, the green pepper and pineapple. In separate pan add and cook until thick, the vinegar, sugar, chicken stock, pineapple juice, 2 ½ tbsp. cornstarch, and soy sauce. Pour sauce over meat balls, and cook in oven at 350º for 20-30, until bubbling.

You can three times this recipe to make a full crockpot. Cook on low for several hours.
