4 pieces bacon
1 onion sliced
1 pkg split peas
S & P to taste

In a medium-size cook pot, fry bacon till crisp. Remove and set aside to be added back later. Sauté onion in bacon grease till it barely starts to caramelize. Add washed peas to the pot. Cover with water up to 2 inches above the peas. Cook on medium-low till peas begin to mush. Add water if necessary, so that soup does not burn. Takes about 45 mins to an hour. Add salt and pepper to taste. Serve garnished with bacon pieces.
Serve with Cheese sandwiches.
