1 Tbs. olive oil
8-10 Italian sausages
1 medium onion, cut into thin slices
2 cloves garlic, minced
1 red pepper, cut into thin slices
1 yellow pepper, cut into thin slices
1 green pepper, cut into thin slices
1 (15 oz.) can diced tomatoes
1 Tbs. Italian seasoning
˝ c. chicken or beef broth
salt and pepper to taste

1. Turn on Instant pot to the “Saute” setting and heat oil.
2. Add sausages and saute until golden brown.
3. Remove sausage to a cutting board and cut into thick slices. Keep aside.
4. Add onions, garlic and saute for about 1 minute.
5. Mix in sliced sausages, peppers, tomatoes, Italian seasoning, salt, pepper.
6. Pour water and mix everything together.
7. Put the lid on and turn up the the valve to “Sealing.”
8. Select “Manual” mode and set the timer for 10 minutes.
9. When the cook time is over, turn the valve to “Venting” and let the pressure release.
10. Mix everything together gently. If the sauce is too thin, turn on the “Saute” setting and cook for 5-10 minutes until excess liquid evaporates and is reduced and the sauce becomes thick.
11. Serve warm.

Leftovers can be stored in a sealed container in the fridge for up to 3 days.

Variations:
1.) Sausage, peppers and potatoes
--Add 2 medium potatoes, diced
2.) Sausage and pepper pasta
--After step 10 add cooked pasta
3.) Sausage and pepper sandwiches
--Place provolone or mozzarella or any other cheese of your choice on 2 slices of thick crusty bread. Then, bake for a few minutes until cheese is bubbly and melted. Add the cooked sausage, peppers, onions and tomatoes on one slice. Finally, top off with more shredded cheese and cover with the other slice of bread
