1/2 Cup margarine or butter
1 Cup brown sugar
Can pineapple slices
Cherries
1 Cup flour
1 tsp baking powder
1/2 tsp salt
3 eggs - separated
1 Cup sugar
5 Tbsp pineapple juice from the can slices

9-10 inch pan (I use a 10 inch corning ware dish) I think Gram used a 10 inch fry pan)

Melt butter in pan. Sprinkle brown sugar over melted butter. Place pineapple slices over all. Put cherries in center of each slice. Set aside

Beat 3 egg whites until stiff. Set aside

Beat 3 egg yolks with sugar until light and fluffy. Add juice Add flour, baking powder and salt beating til combined.

Fold in beaten egg whites

Bake 375º 30-35 minutes til golden and springs back when touched

Carefully invert onto serving tray and remove pan
