No Bake Jell-O Cheesecake Recipe

Ingredients: 1 can very cold evaporated milk (can use low-fat, skim or regular) 1 3 oz box Jell-o ( any flavor you want but LIME has always been the family favorite) 8 oz. cream cheese (can be low fat) 1 Cup sugar 2 tsp lemon or lime juice 1 package ladyfingers

Directions:Dissolve jello in 1 cup boiling water and refrigerate until thickened but not set (approx. 1 hour)
Mix 8 oz. cream cheese, 1 cup of sugar and 2 tsp lemon/lime juice by hand and set aside (low fat cream cheese is softer than regular so easier to mix)
Line sides of 10 inch spring form pan with ladyfingers
Beat can of ice cold evaporated milk at high speed for about 5 miutes until very full; turn mixer to low speed and blend in the thickened jello mixture. Turn mixer speed up and continue to beat for another 3 to 5 minutes. Fold in the cream cheese mixture at low speed just until combined. If you want, fold some berries in at this point*.
Pour into the lined pan and freeze for at least 6 hours |

Notes: * I've been adding blueberries to this over the past years since it seems everyone likes it like that and usually make it in the Summer during blueberry season. Probably add about a cup or cup and a half. I've even added frozen NOT THAWED berries since it's going right back in the freezer.
This recipe freezes very well. You can take out of the freezer, cut some slices and return to freezer with no problem. Does thaw quickly. I've always served it frozen.
