3 C water
3 C heavy cream
2 jalapeno peppers, seeded and minced
1 T kosher salt, or to taste
1 tsp ground black pepper, or to taste
2 1/2 C dry grits
4 T unsalted butter
2 C sharp cheddar cheese, grated

Directions:
Directions:
Combine the water, cream, jalapenos, salt, and pepper in a large saucepan and cook over high heat until it reaches a rapid boil. At boiling point, whisk in the grits, stir constantly to avoid clumps. Lower heat to medium and continue to stir. Stir frequently, cook until grits are soft and creamy (30-40 minutes). Remove from heat. Add butter and cheese.
