Directions:Jeanne Robertson is a fantastic southern storyteller. She told this story about her 7up pound cakes. She had recently learned that someone she knew had a family member who had passed. She wanted to send a pound cake over to the family, because that's what we do in the south, we send food. She normally had pound cakes that she had pre-baked in the freezer for such an occasion. But on this day there were none left. She realized she needed some ingredients from the store. Her husband 'Left Brain', as she calls him, is a smart man, very smart who has both a masters and doctorate. He volunteered to go to the store for her but he was in a rush because he was playing badminton later. He would pick up her grocery items for her if she kept the list small so he could go through the express line.
She quickly made a list. And off to the store he went. It took him quite a while and she was getting worried, but finally he made it home with the groceries. He came in with 4 bags and then headed out to the car for more. She couldn't imagine what on earth he had bought. So she looked in the bags.
First bag, a pound of butter (well that looked right) and then a couple of large bottles of extract! It would take her years to go through all of that extract. Then 3 dozen eggs. Well, she surmised they must be having a big sale on at the store, she only needed 5 eggs and all she'd asked for was a dozen. In the 4th bag she found her list.
In her rush to make sure that he could check out in the express line she, for the first time in her life had numbered the items.
1 pound of butter 2 large bottle of extract 3 dozen eggs 4 big tub of lard
Oh my goodness, right on cue, he next came in with 4 large tubs of lard that's 12 pounds of lard. Looking ahead at her list, No. 5 was 5 pounds of sugar. He had 25 pounds of sugar to bring in and then No. 6 was 5 pounds of all purpose flour so he was struggling to bring in 30 pounds of flour.
She looked again at her list No. 7 was 7up. She didn't want a big bottle when a small bottle was the size she needed. If she opened a big bottle it would go stale, so No. 7 was a 6 pack of 7ups. He was bringing in 42 bottles of 7up.
Huffing and puffing he looked at her and commented "Obviously they wouldn't let me through the express line... and by the time it hit me the cashier was already ringing up the 7up's!"
The actual recipe is 2 sticks of butter ½ c shortening 3 c sugar 5 eggs 3 c flour measured then sifted 1½ tsp extract 7 oz of 7Up
Set oven to 415º (will lower to 300º later). Cream the butter shortening and sugar til fluffy, add in the eggs, then the sifted flour, extract and 7up (don't substitute for sprite). Place in 2 sprayed small bundt pans.
Turn oven down to 300º and bake for about an hour. Test with a knife. Remove when done and let cool for about 20 minutes and then remove from pan.
