2 egg whites
1 ½ cup sugar
¼ tsp. salt
⅛ tsp. cream of tartar
⅓ cup boiling water
1 tsp. vanilla or almond flavoring

Directions:
Directions:
Combine all ingredients in the top of a double boiler; stir until well mixed. Place over rapidly boiling water and cook, stirring for 1 minute. Remove the spoon and continue cooking for 4 minutes without stirring. Leave over simmering water. Beat with and electric mixer until stiff and stands in peaks (7-10 minutes). Add flavoring and mix in. Frost cooled cake immediately.

This recipe is from a well worn cookbook that I bought from one of my home economics major friends when I lived at Dorm 12 at Auburn University. I think is was a fund raiser for some club. Over half a century later, it's in tatters and losing pages, but the recipes, which are all from scratch, still work. This one is the icing which goes on devil's food cake, one of my favorites.
