1 pound sausage, hot or mild depending on your taste
2 medium onions, chopped
1 box wild rice mix (Zatarain's)
1 10¾ oz. can cream of mushroom soup
2 10¾ oz. cans cream of chicken soup
1 cup water
1 4 oz. can sliced mushrooms
1 8 oz. can water chestnuts, sliced
1 2 ½ oz. package chopped or sliced almonds

Brown sausage and onions and drain off fat. Add to the cooked rice mixture until well mixed. Add remaining ingredients and pour into a 9 X 13 inch baking dish. Bake at 350º for 30-40 minutes. May be made the day before or frozen and reheated.

This recipe was given to me by a friend, Judy Bland, after I ate it at a brunch and complimented her on it. It is easy to make, can be made ahead, feeds a lot of people, and freezes well. She recommended Zatarain's Wild Rice Mix, but it is getting increasingly hard to find. Delicious and great for a brunch.
