4 - 6 ears of corn
Garlic Aioli (see recipe)
Butter
Slap Your Mama Cajun seasoning
Cotija cheese (optional)
Cilantro
Limes

Directions:
Directions:
Shuck and clean corn
Place each ear on a separate sheet of aluminum foil
Slather butter on the corn
Close up the foil

Roast in the oven at 425 for 20 minutes.

Remove corn from oven.
Open each pouch and slather with garlic aioli, cajun seasoning, cotija cheese, chopped cilantro and squeeze lime juice over the cob.

Serve immediately.

We also make this with frozen corn kernels for those who have trouble eating corn off the cob. Just microwave the corn until hot, then follow same directions.
