1 c uncooked rolled oats
1 c buttermilk or sour milk
1 c flour
1 tsp baking powder
1/2 tsp salt
1 egg, beaten
1/4 c butter, melted
1 c fresh or frozen blueberries
1/2 tsp baking soda
3/4 c lightly packed brown sugar

Directions:
Directions:
Combine oats and buttermilk in a small bowl. Let rest while combining flour, baking powder, soda, salt, and brown sugar. Stir and blend well. Add egg and melted butter to the oat mixture. Mix well. Add all the rest of the dry ingredients and stir just until al the ingredients are moistened. Gently fold in blueberries If frozen, thaw and drain well.

Fill well-greased muffin tins 3/4 full. Bake at 400º for 15-20 minutes.
