Banana Bread


Ingredients:

2 very ripe bananas
½ c margarine, at room temp
2 eggs, beaten
¾ c sugar
3 T brown sugar
2 tsp lemon juice
¼ c milk
1½ c all purpose flour sifted
1 tsp baking soda
½ tsp baking powder
½ tsp salt
¾ c walnuts (optional)

Directions:
Directions:
Peel and mash bananas in large mixing bowl. Add softened margarine, beaten eggs, sugars and lemon juice. Beat by hand for 1 minute. Alternately add dry ingredients and milk until all flour mixture is blended well. Do not overbeat.

Pour into greased 9 x 5 loaf pan.Bake at 325º for 60-65 minutes. Cool before removing from pan. This is a moist bread, but can be served with butterscotch sauce.
 

Butterscotch Sauce


Ingredients:

½ tsp salt
2 c light brown sugar
⅓ c light corn syrup
⅓ c margarine
½ c evaporated milk (undiluted)

Directions:
Directions:
In a saucepan combine the salt, sugar, corn syrup, margarine and evaporated milk. Bring ingredients to a boil and cook on medium low for 3 minutes or until candy thermometer reaches 220º. Stir sauce only until it comes to a boil.

Makes 2 cups. Do not refrigerate sauce.
