¾ c dried soy beans, soaked overnight
2 c water
¼ c old fashioned rolled oats
2 T maple syrup
2 T olive oil
2 c cornmeal
2 tsp poppy seeds (optional)

Directions:
Directions:
Preheat oven to 375º and lightly spray a 12 muffin tin.

Drain and rinse beans, and place in a blender or food processor. With motor running gradually add 2 cups water. Process until smooth, about 2 minutes. Add oats, maple syrup and oil. Pulse several times to incorporate.

In a mixing bowl, combine purée and cornmeal, and mix well.

Scoop or spoon batter into prepared muffin cups. Sprinkle tops with poppy seeds, if desired. Bake until golden about 30 minutes. Remove to a rack to cool.
