1 sheet frozen puff pastry, or one pie shell (I use store bought pie shell)
1 lb sausage, (like Bob Evans or Jimmy Dean roll)
¼ cup chopped onion
¾ cup dried cranberries
1⅓ cups shredded Monterrey Jack cheese
5 eggs, slightly beaten
2 cups half and half
Fresh parsley for garnish

Directions:

Preheat oven to 375º.
Combine and cook sausage and onion in large skillet over medium-high until sausage is browned. Drain. Remove from heat and stir in cranberries.
Sprinkle cheese over bottom of pie shell, top evenly with sausage mixture.
Combine eggs and half and half in bowl; whisk until blended but not frothy.
Pour egg mixture over sausage mixture in pie shell.
Bake 40-45 minutes or until knife inserted comes out clean. Let stand 10 minutes. Garnish with parsley.
