2 cups fresh lemon juice...
1 cup olive oil...
1 T red wine vinegar...
1 1/2 t of minced garlic...
1/2 t dried oregano...
Salt and pepper to taste...
2 (2 1/2 to 3 pound) chicken...
Be sure chickens are cut in halve....
1/4 cup chopped parsley...

Preheat oven to 425º...
Place racks in top and bottom thirds of oven...
Whisk together lemon juice, olive oil, vinegar, garlic, oregano and S & P...
Cover and refrigerate if not using within several hours...
Whisk vigorously before using...
Season chicken halves with salt and pepper...
Place chicken on baking sheets and roast for 30 minutes, turning once at 15 minutes....
Remove chicken from oven and preheat the broiler...
With a very sharpe knife, cut each chicken half into 6 pieces ( leg, thigh, wing and cut the breast into 3 pieces, pour sauce over the chicken and toss to coat it well...
Broil one pan of chicken for 3 minutes, turn the chicken over and broil for another 2 minutes, keep the chicken warm while you do the same to the other pan of chicken...
Place chickens on a serving platter...
Pour sauce into a heavy saucepan, stir in parsley and place over high heat for 1 1/2 minutes...
Pour sauce over chicken and serve with lots of crusty bread to absorb the sauce....
