2 large cooked chicken breasts
2 large avocados
1 c corn from cooked cob, (or frozen corn kernels)
6 oz lean bacon, cooked and chopped
¼ c chives (or green onion), chopped
2 Tbsp dill, chopped, or to taste (opt)
hard boiled egg slices (opt)

Lemon Dressing:

3 Tbsp lemon juice, freshly squeezed
3 Tbsp extra virgin olive oil
1 tsp sea salt, or to taste
⅛ tsp black pepper

Directions:
Directions:
1. Dice or shred chicken breasts and place in large mixing bowl
2. Add chopped avocado.
3. Add corn (freshly cooked is best), onion, bacon, and dill.
4. Combine dressing ingredients. Drizzle over salad and toss to combine. Serve with slices of hard boiled eggs if desired.
