Ingredients: 2 1/2 cups flour 1 tsp. baking powder 1 tsp. baking soda 1/4 tsp. salt 1 cup margarine 1 cup peanut butter 1 cup sugar 1 cup firmly packed brown sugar 2 eggs 1 tsp. vanilla

Directions:In a small bowl, stir flour, baking powder, baking soda, and salt. In a large bowl with mixer at medium speed, beat margarine and peanut butter until smooth. Beat in sugars until blended. Beat in eggs and vanilla. Add flour mixture; beat until well blended. Refrigerate dough until chilled. Shape into 1-inch balls. Dip in sugar and place 2 inches apart on ungreased* cookie sheets. Flatten with fork dipped in sugar making a crisscross pattern. Bake in a 350º oven 12 minutes or until lightly browned. Let cool until firm enough to move to a wire rack to cool completely. |

Notes: My Aunt Marie, Mother's sister, received "commodities". That was surplus food distributed by the federal government to low income families in the days before Food Stamps. Since she didn't eat cheese or peanut butter, she saved those items for our family. Both were quality products and there were recipes on the containers. This was the peanut butter cookie recipe and we loved it. We jokingly referred to them as "welfare peanut butter cookies".
*Many cookie recipes say to cook on an ungreased baking sheet. I am skeptical about that, so I always use my silicone baking liner (Silpat made in France is best, but the knockoffs work too). It guarantees that the cookies will not stick to the pan and most times you don't even have to wash the pan.
