1 Deep Dish Frozen Pie Crust
2 Large peeled and diced, 2 1/2 Cups needed
1 1/4 Cup Sugar
1/2 Teaspoon Nutmeg
1/4 Teaspoon Cinnamon
Pinch of Pumpkin Pie Spice
1 Egg, mixed by hand separately
2 Teaspoons Flour or cornstarch
1/2 Teaspoon Baking Powder
1 Stick Butter, melted
1 Teaspoon Vanilla
1 Teaspoon Lemon Juice
1 Cup Sweetened Coconut (Optional)

Bake sweet potatoes on sheet pan in oven for one hour. Let cool. Remove peeling. Remove light colored potato to remove strings. (You can use frozen sweet potatoes. Cook in Ninja on pressure cooker for 10 minutes and remove. Need 2 1/2 cups). Mix egg in bowl with mixer until fluffy. Remove and set aside. Add Sweet Potatoes. Mash sweet potatoes well in mixer. Mix several times until most strings are removed. Add other ingredients Mix all ingredients, except pie crust and egg together in mixer. Add coconut (Optional). Mix fluffed eggs and gradually add to mixture after tasting for additional seasoning. Dock the bottom of pie crust with a fork. Do not shake beaters because all the potato strings will be there. Mix mixture well. Taste mixture for sweetness. Add additional sugar if needed. Add the egg mixture. Remove beaters and place in sink. Pour sweet potato mixture into pie crust. Bake at 425 degrees for 10 minutes, lower oven to 325 degrees, and bake for 55 - 1 hour 15 minutes until done.
