1 Deep Dish Frozen Pie Crust
2 Large peeled and diced, 2 1/2 Cups needed
1 1/4 Cup Sugar or Sugar Free Sugar
1 Teaspoon Nutmeg
1/4 Teaspoon Cinnamon
1/4 Teaspoon Ginger
1/4 Teaspoon Allspice
Pinch of Pumpkin Pie Spice
2 Eggs, mixed with mixer separately
1/4 Cup Buttermilk or Evaporated Milk
2 Teaspoons Flour
1/2 Teaspoon Baking Powder
1/2 Stick Butter, melted
1 Teaspoon Vanilla
1/4 Cup Sour Cream
1 Teaspoon Lemon Juice
1 Cup Sweetened Coconut (Optional)

If using Sugar Free Sugar Substitute, use 2 teaspoons Vanilla.

Bake sweet potatoes on sheet pan in oven for one hour. Let cool. Remove peeling if needed. Remove light colored potato to remove strings. (You can use frozen sweet potatoes). Mix eggs in bowl with mixer until fluffy. Remove and set aside. Add Sweet Potatoes. Smash sweet potatoes well in mixer. Raise beaters and remove strings to trash. Mix several times until most strings are removed. Mix all ingredients, except pie crust and eggs, together in mixer. Add coconut (Optional). Mix fluffed eggs and gradually add to mixture after tasting for additional seasoning. Dock the bottom of pie crust with a fork. Place a large sheet of foil in the crust. Add about 2 Cups of dried beans to bottom. Raise oven temp to 425 degrees. Cook in oven for 25 minutes. Remove from oven. Take foil and beans out of crust. Place beans back in jar for reuse. Let pie crust cool. Do not shake beaters because all the potato strings will be there. Mix mixture well. Taste mixture for sweetness. Add additional sugar or sweetener if he needed. Remove beaters and place in sink. Pour sweet potato mixture into pie crust. Place foil strips around pie or use store bought pie crust shields. Bake at 425 degrees for 10 minutes, lower oven to 325 degrees, and bake for 55 - 1 hour 15 minutes until done. Remove foil and let pie crust brown.

Lower the temp to 400 degrees for 10 minutes and adjust to 300 degrees to bake if Sugar Free Substitute was used.
