Ingredients: 3 pounds fresh berries (12 cups) 4½ cups of sugar 4½ teaspoons of lemon juice (fresh squeezed is best) NO PECTIN NEEDED Pinch of coarse salt (Kosher)

Directions:IMPORTANT TIP: USE A WOODEN SPOON TO STIR BERRY MIXTURE
1) Put all ingredients into a heavy cast iron pot/stockpot. Smash the berries with a potato smasher. 2) Bring the mixture to a boil, stirring constantly. The foam is starting to accumulate on top. Cook the mixture until you have a boil that will not be stirred down. IMPORTANT: So if you can stir the mixture and it stops boiling. It's not cooked enough yet. 3) Once it boils to where it doesn't subside while you are stirring then it's ready. FROM THIS POINT COOK FOR ANOTHER 12 MINUTES - keep stirring so it doesn't burn. 4) The mixture will start getting thick and the fruit come to the top. 5) Do the jam test by putting a smear of the jam on to a cold plate in the freezer and run your finger through it - should hold the path; or test by taking a spoon and dipping it and letting the mixture run off the spoon into two thick drops coming together into a single sheet drip. THIS IS THE TWO TEST METHODS. 6) Before jarring you can remove some of the seeds by straining (use a shifter) before putting the hot mixture in the jars.
HOWEVER: SINCE WE LIKE THE SEEDS IN THE JAM. WE WILL SKIP THIS PART.
7) Now put into sterilized hot water bath jars. Removing one jar at a time from the hot water. Fill the jar, put the warm lids on it. Fill the jar leaving a 1/2 inch headspace. Make sure the rim of the hot filled jar is wiped off with a hot wet paper towel. No residue on the rim. So jars will seal.
8) Put the filled jar back into the hot water bath. Make sure it is immerse into the water. ONCE THE WATER COMES BACK TO A BOIL - TIME IT FOR AN ADDITIONAL 30 MINUTES. UNLESS YOU HAVE A SPECIAL HOT WATER BATH LID THAT SHOWS YOU WHEN ITS READY. |
