4 eggs, separated
½ cup sugar
1 cup grated carrots packed tight
¼ cup apple, shredded
1/3 cup potato starch
¼ cup raisins
½ tsp. grated lemon peel
¼ cup red wine
2 Tbs. lemon juice

Directions:
Directions:
Beat yolks with sugar until light.
Add carrots, apple, wine, lemon juice and potato starch.
Blend well.
Beat whites stiff, then fold in yolk mixture.
Bake in well greased 11/2 quart casserole at 375 for 35 minutes.
Serve hot or cold.
Serves approximately 6 as a side dish.
