½ cup Matzah cake meal
½ cup Potato Starch
½ tsp. salt
4 TBS. or more Cocoa (unsweetened)
4 Eggs
2 cups Sugar
1 cup oil
2 cups pecans or walnuts, chopped

By hand:

Preheat oven to 325
Mix dry ingredients together and reserve. Beat eggs and sugar until thick and fluffy.
Add oil and mix well.
Add dry ingredients and blend well. Stir in chopped nuts and spread in an oiled 8 or 9” square pan. Bake for 35 minutes. Cool slightly and cut into squares.

With a cuisinart:

Place dry ingredients in work bowl ( metal blade) and pulse several times to mix; remove.
Add eggs and sugar to work bowl and process 1 minute. Add oil and process several seconds to mix well. Add dry ingredients and pulse until combined. Add whole nuts and pulse to chop and mix in.
