4 eggs separated
½ lemon or orange rind
½ cup sugar
½ cup cake meal
¼ tsp. salt
Jelly

Directions:
Directions:
Beat together yolks and sugar until creamy and light
Add rind
Mix in cake meal
Add salt to whites, beat until stiff and fold into batter
Line an 8x12 pan with waxed paper
Spread batter evenly in pan
Bake at 350 for 12 minutes
When done, lift out cake with paper and place on damp cloth for few minutes
Turn over on to waxed paper
Sprinkle with superfine sugar
Remove paper in which cake was baked and spread cake with jelly and roll up
Wrap in waxed paper, then damp cloth
Let stand 15 minutes
Remove wrapping and dust cake with superfine sugar
