1 c yellow cornmeal
2 eggs, well beaten
1 c sweet milk
½ tsp soda
¾ tsp salt
1 (#3 ) can cream style corn
1 large onion
½ lb rat cheese, grated
3-4 mild peppers
½ lb ground meat

Directions:
Directions:
Mix the cornmeal, eggs, and milk with soda and salt (milk is sweet even though soda is used).

Sauté ½ pound ground beef, put on absorbent paper to drain grease. Prepare and set aside in separate mounds: the onion chopped, ½ lb of rat cheese grated and 4 canned mild Jalapeno peppers, chopped.

Grease a large pan or skillet, heat and sprinkle a very thin layer of meal in skillet, let it brown slightly. Pour in ½ batter in skillet, sprinkle cheese, then meat, and next onions and pepper. Pour remaining batter on top. Bake 45-50 minutes at 350º
