1 large onion
1 large baking potato, peeled
3 large raw carrots
3 cups unpeeled grated zucchini (11/4 pounds)
½ cup matzah meal
1 egg and 2 egg whites
2TBS.oil (Preferably canola)
salt and pepper

Directions:
Directions:
In processor grate vegetables, add matzah meal and oil. Beat in egg and egg whites. Add salt and pepper. Pour in (oiled) 9x13” baking dish, bake one hour or more at 350 (check at one hour)

This can be made in a deep casserole dish. The texture will be softer and not as crunchy and it will take longer to bake. Serves 6-8 as a meal. 12-15 as a side dish.
