3 cups self-rising flour
1 cup heavy cream
1 cup ginger ale
Egg wash, milk, or cream (optional)

Preheat oven to 400°F (200°C). Line tray with parchment paper.

Combine the flour, cream, and ginger ale in a bowl and mix until flour is mostly combined. Do not over mix, it will make the biscuits dense. The dough should be soft and fairly sticky.

Turn out onto a floured surface and knead gently just 3 to 5 times to bring dough together, then gently pat into a disc shape 1-inch (2.5 centimeters) thick.

Use a 2 ½-inch (6 centimeters) round cutter to cut rounds; press straight up and down, flour cutter in between. Place on tray, slightly touching each other.

Brush the tops lightly with egg wash, milk or cream if using.

Bake for 15 minutes until golden on top. Place on rack to cool.

Feel free to use a lemon-lime soda or other light-colored soda in place of the ginger ale.
