1 pound dry navy beans
1 smoked ham hock
1 large onion, diced
2 large carrots, diced
3 celery ribs, diced
1 teaspoons garlic powder
1 teaspoon dried parsley
salt and pepper to taste

Directions:
Directions:
Sort and wash beans. Place in stock pot, cover with one inch of water, bring to boil and cook for five minutes. Let stand for at least an hour. Add rest of ingredients, cover with water and simmer until tender. Remove meat from hock, add back to pot and discard bone and fat.

Make sure that beans are fully cooked and soft.
May use two ham hocks if desired.
May add liquid smoke at end if desired
