turkey giblets
1 carrot stick
1 celery stalk
1 quartered onion
1 stick butter
1 c. celery
1 c. onion



Directions:
Directions:
Place first 4 ingredients in a pot to boil. Simmer 2 hours. Refrigerate overnight. Skim fat off surface.
Season in layers 1 loaf of dried, torn bread with salt, pepper, sage and poultry seasoning.
Sauté butter, celery and onion. Set aside. Reheat broth, removing giblets and veggies. Strain. Add sautéed butter, celery, onion to dried bread. Add strained broth to bread to desired wetness. Mix well. Gently stuff turkey; don’t pack.

This recipe was a tough one to nail down, as Mom just did it with no measurements. I wrote this one down in the year 2000 while she and I made it together for my first time.
