1 c all purpose flour
1 T sugar
2 tsp baking powder
¼ tsp salt
1 beaten egg
1 c milk
2 T cooking oil

Directions:
Directions:
In a bowl mix together flour, sugar, baking powder and salt.

In another bowl combine egg, milk and cooking oil. Add to flour mixture all at once.
Stir the mixture til all blended but slightly lumpy.

Pour about ¼ c batter onto a lightly greased hot griddle. Cook til pancakes are golden brown turning to second side when pancakes are bubbly on the surface with dry edges.

To make Buttermilk pancakes reduce the baking powder to 1 tsp and add in ½ tsp of baking soda. Substitute buttermilk for the regular milk and add extra butter milk as needed to thin the batter.
