2/3 cup sliced carrots
1/2 cup diced onion
2 garlic cloves, minced
3 cups vegetable or chicken broth
1˝ cups diced green cabbage
1/2 cup diced zucchini
1/2 cup chopped kale or Swiss chard (for more nutrition but optional)
1/2 cup fresh green beans (or frozen)
1 tbsp tomato paste (or even a can of stewed tomatoes)
1/2 tsp dried basil
1/4 tsp dried oregano
1/4 tsp salt

In a large heavy soup pot, sauté the carrots, onion, and garlic over medium to low heat until softened for about 5 minutes. Add broth, cabbage, beans, kale and spices and bring to a boil. Lower heat to low and simmer covered for about 30-35 minutes (until beans are tender).

If adding zucchini add in for only the last 3-4 minutes of cooking. Serve hot.
