2 Tbs sesame oil
2 Tbs vegetable oil
1 lb peeled & deveined shrimp
1 1/2 C frozen veggie blend
1 C frozen sweet corn
1/2 C green onions, chopped
4 cloves garlic minced
1 tsp ginger minced
3 large eggs, lightly beaten
4 C cooked white or brown rice
4 Tbs soy sauce
1 Tbs mirin
salt & pepper

Directions:
Directions:
Large skillet over med-high heat, add veg oil & then add shrimp and cook for 5 min, stirring until golden brown.
remove shrimp & set aside
same skillet, add sesame oil & garlic, ginger cook for about 30 seconds
next add veggies, corn, onions & cook stirring for about 2-3 min until they soften
push everything to one side of the skillet and add lightly beaten eggs. Stir to scramble & cook eggs. once cooked combine with veggies
add shrimp back to skillet & add cooked rice. drizzle with soy sauce and miring, and stir to combine. Cook for about 2 min , shrimp &rice are well heated through.
Serve warm garnished with green onions and sesame seeds
