1 cup sugar
1/4 cup corn starch
1/4 tsp salt
3 cups milk
3 egg yolks (keep 3 egg whites for your meringue)
2 Tbsp. butter
2 tsp. vanilla
2 oz. unsweetened chocolate squares

1/2 tsp. vanilla
1/4 cup sugar

In a medium heavy saucepan, combine sugar, cornstarch, and salt. Stir in milk slowly; blending til smooth. Cook over medium heat until mixture boils and thickens. stirring CONSTANTLY. Boil 2 minutes; remove from heat. Blend a small amount of hot mixture into egg yolks. Return yolk mixture to hot mixture; blending well Cook until mixture begins to bubble, stirring constantly Remove from heat; stir in butter and vanilla. Mix well. Cool custard for about 10 minutes. To assemble pudding,in bowl (oven proof if you are planning to top with meringue) layer Nilla Wafers, sliced bananas and 1/2 pudding 2 times ending with pudding. Follow the meringue recipe to top pudding and bake as instructed in Meringue Recipe.

Meringue

In a deep mixing bowl, beat egg whites, cream of tartar and vanilla at medium speed until soft peaks form, about 1 minutes. Gradually add sugar; beating on high speed until stiff peak forms and sugar dissolves. Spoon meringue onto custard from center to edges of crust to seal well and prevent shrinkage. Use narrow spatula; swirling meringue. Bake at 350 degrees for 12 minutes or until light golden brown. Cool on wire rack. Can be stored in fridge.
