¾ c. sugar
1 c. packed brown sugar
1 c. butter or margarine, softened
2 eggs
1 tsp. vanilla
2 c. flour
½ tsp. baking powder
1 tsp. baking soda
½ tsp. salt
4 c. cereal
1 c. quick cooking oats
½ c. flaked coconut (optional)
1 c. chocolate chips (optional)
½ c. chopped walnuts (optional)

Directions:

Heat oven to 350º. Cream sugars and butter in large bowl. Add eggs and vanilla to sugars and blend thoroughly. Stir in all remaining ingredients. Batter is thick and tough to mix, but will incorporate. Drop by ¼ cupful onto ungreased cookie sheet. Flatten each ball (dough does not spread out much) and shape into circles. Bake 6 minutes and rotate cookie sheet, bake additional 3-6 minutes until golden brown. Cool 1 minute on cookie sheet and remove to wire rack.

I use an old-style ice cream scoop to measure these out. Use any cereal you have on hand, great way to use up the leftover cereal in the bottom of the box. I have combined Golden Grahams and Honey Nut Chex, Golden Grahams and Cinnamon Toast Crunch and Reese's Puffs with Cocoa Krispies. Add any combination of cereals! I don't add the coconut, or the nuts. I increased the chocolate chips. Very versatile recipe! Makes a VERY large cookie. I also use regular oatmeal, and that works out just fine. I bake mine for 12 minutes total. We love these!
