2 1/2 cups Granulated Sugar
1/4 cup white corn syrup
1/2 cup water
2 large egg whites, beaten stiff
1 tsp. vanilla
Food coloring; if desired

Directions:
Directions:
Grease a large piece of foil with butter. Begin beating egg whites to form stiff peak. In heavy sauce pan, mix sugar, syrup, and water. Cook over moderate heat until mixture forms soft ball or reaches soft ball stage on candy thermometer (safest method). Remove hot syrup from stove, slowly pour into beating egg whites. Pour about half of syrup in egg whites and return syrup to stove top to bring back to soft ball. Pour remaining syrup in egg white mixture. Continue beating until mixture holds its shape, You may add a couple drops of food coloring into mixture if desired. It will begin to lose it's glossy sheen and begin getting dull. Add vanilla. Divinity will hold its shape when ready to spoon out. This is when you will need to work quickly to spoon out on prepared foil. Let set, The divinity will be dry on the outside and be creamy in the center, Store in a air tight container.

This candy I make only during the Christmas Holidays. A couple of secrets to making this candy a success...make on a day when a nice dry cool front blows through and always have plenty of time because this can't be made when you are rushing.
