Chicken:

1.5 lb Boneless chicken cut into bite sized pieces
2 cloves garlic, minced
1 T dried oregano
1 t salt
1 lemon, juiced
1/4 C olive oil

To serve with: Pita bread, tomato, feta cheese

Tzatziki Sauce:

1 C greek yogurt
1/2 clove garlic, minced
1/2 t salt
1/4 Cucumber, peeled and grated

Spanakorizo:

3 T olive oil
1 onion, chopped
3 garlic cloves minced
4 T chives, sliced
2 T dill, chopped
1/4 lb baby spinch
1 C rice
2 C chicken stock
3 T butter
1 T lemon juice
1/2 T lemon zest
feta cheese to garnish

Chicken:

combine garlic, organo, salt, lemon juice and olive oil in bowl. Whisk. Add chicken and cover for up to 3 hours.

Preheat pan to 400. Put chicken on cooking sheet and cook for 15 minutes. Finish under grill to char.

Tzatziki Sauce:

Combine ingredients and chill before serving.

Spanakorizo:

Heat oil and saute onion. Add garlic, dill and chives. Saute one minute. Add spinach and cook until wilts. Add rice, stock, salt and pepper. Bring to boil and simmer for 20 minutes. Uncover and add butter, lemon juice, and garnish with some chives, dill and feta.
