3 onions
1 T. EVOO or butter
1.5 6 large plum tomatoes
1 pkg. feta cheese, crumbled or a mix of goat cheese and melting cheese with it.
1 long thin French bread loaf

Directions:
Directions:
Cut up onions. In a large fry pan, heat butter and sauté onions slowly - until caramelized. (10 minutes)
Meanwhile, cut up plum tomatoes and drain them in colander over a bowl.
Crumble feta ( or add other cheeses to feta) into a bowl.
Slice French bread into thin slices and lay on parchment lined cookie sheet,
spreading with a garlic powder and butter mix if desired, and toast or grill bread. Top with caramelized onion, tomatoes and cheeses and broil to melt cheese. Sprinkle with basil if desired. Serve hot.
