2 gammon steaks
2 eggs
100g of asparagus
100g of broccoli
4 carrots
Cajun seasoning

Preheat the oven to 180C. Chop the tops and tails off the carrots, cut them half and then into fingers

In a lined backing tray, place the broccoli, asparagus and carrot sticks, and drizzle them with some olive oil and cook for 25 mins, after 10 mins give them a good shake

At this point give your gammon steaks a good covering of Cajun spice on both sides
In a pan head a glug of oil on medium-high and cook the steak for 3-4 mins on both sides.

When the steaks has 2 mins to go, crack the eggs into the pan to get all the meat juices. Give a light sprinkling of Cajun seasoning over the top.

Cover with a lid and finish cooking the eggs. Serve on a plate, top the steak with a pineapple ring and sprinkle the vegetables with some flaky salt.
