3 cups fresh or frozen blueberries
Juice of half a lemon
2/3 cup granulated sugar
1 tablespoon water
14 oz. can cream of coconut
14 oz. can coconut milk
1 tablespoon lemon paste (optional)
1 tablespoon vodka (optional)

Directions:
Directions:
Place blueberries lemon juice, sugar, and water in a medium sized saucepan over a medium heat until boiling. Let boil for 3 to 5 minutes, stirring often, until berries begin to burst and sauce is a deep purple color. Set aside and let cool for a few minutes.

Combine coconut milk, coconut cream, cooled blueberry mixture, vodka, and lemon paste in a blender and blend on high sped for 3 to 4 minutes. Chill the blended mixture for about 30 minutes and then process according to your ice cream manufacturer’s instructions. Pour into a container and freeze using the power cycle.
