Ingredients: 3/4 c.chopped onion 2 cloves garlic, minced 3 T. olive oil 4 c. diced tomatoes (two 1-lb. cans) 2 (6 oz.) cans tomato paste 1 c. water
1 T. sugar 1-1/2 tsp. salt 1/2 tsp. pepper 1-1/2 tsp. crushed oregano 1 bay leaf hot cooked spaghetti 1 recipe Italian Meat Balls

Directions:Cook onion and garlic in hot oil until tender, but not brown. Stir in tomatoes, tomato paste, water, sugar, salt, pepper and oregano, and add bay leaf. Simmer uncovered for 30 minutes. Add Italian Meat Balls, (see recipe below) and continue cooking about 30 minutes longer. Serve over hot spaghetti. Pass a bowl of grated Romano or Parmesan cheese for folks to help themselves. Makes 6 servings. |

Ingredients: 1 c. water 4 slices dry bread 1 lb. lean ground beef 2 eggs, slightly beaten 1/2 c. grated Romano cheese 2 T. chopped fresh parsley ( or 1 T. dried) 1 large clove garlic, minced vey fine 1 tsp. crushed dried oregano 1 tsp. salt dash of pepper

Directions:Put water In a shallow pan, soak bread for 2 to 3 minutes, then squeeze out moisture. Combine the soaked bread with the ground beef, eggs, Romano cheese, parsley, garlic, oregano, salt and pepper. Form into small balls (about 20). Brown slowly in 2 T. hot olive oil. Add to sauce, cook 30 minutes more, as directed above. |
