2 lbs. lean ground beef
1 T. vegetable oil
1 medium onion, chopped
2 cloves garlic, minced
3 c. water
1 tsp. salt
1/2 tsp. black pepper
1 bay leaf
1/2 tsp. celery salt
1/2 tsp. cumin
1/2 tsp. oregano
2 T. chili powder
1 (15 oz.) can tomato juice
1 (8 oz.) can tomato sauce
1-1/2 T. Masa Harina
1 (15.5 oz.) can pinto beans, optional

Directions:
In a large pot, over medium heat, combine meat, oil, onions and garlic. Cook just until meat is no longer pink. Drain off excess grease. Add remaining ingredients except Masa Harina and beans. Simmer for 1 hour. Thicken the chili with a mixture of the Masa Harina and a little water. Stir well to combine, add beans, if desired. Cover and simmer for 30 minutes more. Remove bay leaf and serve. Makes 6-8 servings
