2 tsp. olive oil
1 yellow onion, chopped
3 garlic cloves, minced
1 med. red bell pepper, chopped
1 lb. extra lean ground turkey
4 T. chili powder
2 tsp. ground cumin
1 tsp. dried oregano
1/4 tsp. cayenne pepper
1/2 tsp. salt, or more to taste
1 (28 oz.) can diced tomatoes
1-1/4 c. chicken broth
2 (15 oz.) cans dark red kidney beans
1 (15 oz.) can sweet corn
Garnishes: cheese, avocado, cilantro, sour cream

Directions:
Directions:
Place oil in a large pot over medium-high heat. Add onion, garlic and red pepper and sauté for 5 to 7 minutes, stirring frequently. Next, add ground turkey and break up the meat; cook until no longer pink. Add chili powder, cumin, oregano, cayenne pepper and salt, stir and cook about 30 seconds. Then add in tomatoes, chicken broth, beans and corn. Bring to a boil, then reduce heat to Low and simmer for about 45 minute, or until chili thickens and flavors come together. Taste and adjust seasonings and salt as desired. Garnish with anything you like. Make 6 to 8 servings.
