1-1/2 lbs. boneless chicken breasts
4 c. chicken broth
2 c. water
1 c. diced onion
1-1/2 c. frozen corn
1/2 c. Quinoa
2 (4 oz.) cans diced green chilies
3 garlic cloves, minced
1 T. cumin
1/3 c. fresh cilantro, chopped
1 (15 oz.) can white beans, drained
salt to taste
3/4 c. shredded smoked Gouda cheese
1/4 c. diced green onions
1 avocado, sliced

Directions:
Directions:
In a crockpot, combine the chicken breasts, chicken broth, water, chopped onion, frozen corn, quinoa, diced green chilies, minced garlic, cumin and chopped cilantro. Stir, cover, and cook on Low for 5 hours. Remove chicken, and dice or shred. Add chicken back to crock pot with beans. Cook an additional 30 minutes, add salt to taste, and serve. Garnish each serving with smoked Gouda cheese, avocado and green onions. Makes 8 to 10 servings.
